Pinch Bakehouse’s Dubai Chocolate Mooncake is a halal Mid-Autumn creation made with a fudgy chocolate brownie base, chewy Taiwanese-style mochi and a crunchy pistachio centre. Instead of using traditional lotus or white bean paste, it takes the chocolate, pistachio and textural contrast associated with Dubai chocolate and rebuilds it around Pinch’s signature brownie.
Why We Wanted to Make a Real Dubai Chocolate Mooncake
Dubai chocolate is everywhere, but what made it popular was never just the pistachio.
A good Dubai chocolate dessert is all about contrast. Rich chocolate. Deep pistachio flavour. Something creamy. Something crunchy. Different textures hitting at the same time.
We did not want to take a standard mooncake filling, add cocoa powder, sprinkle some pistachio over the top and call it Dubai chocolate.
We wanted the chocolate and pistachio to actually matter.
Real Chocolate Character
The chocolate comes from a proper fudgy brownie base, not a neutral paste with chocolate flavour added to it.
Pistachio at the Centre
Pistachio is part of the actual bite, bringing nuttiness and richness instead of being used only as decoration.

We have made pistachio brownies, cornflake brownies, cheesecake brownies, cookie dough brownies, salted caramel brownies, cookies and cream brownies and plenty of other variations over the years.
So when we started planning our 2026 mooncake collection, we did not want to simply ask, “What mooncake flavour has not been done yet?”
We asked a better question: what can Pinch bring to mooncakes that actually feels like us?
We went through plenty of ideas. Mango. Black sesame. Salted egg. Taro. Sweet potato. All good flavours, but all familiar territory in Singapore’s Mid-Autumn market.
Then we went back to brownies.
